Growing up in small-town Texas, I learned the true meaning of community around my little Grandma’s table. She made everyone feel special, crafting dishes just for them. Family and neighbors came together with a casserole, Jell-O salads, and whatever they could afford, creating a warm and welcoming table even in tough times. You didn’t need a special occasion; you just needed people who cared. Laughter and stories filled the air, creating a sense of belonging.

Food insecurity affects millions of Americans, with approximately 10.5% of U.S. households struggling to access adequate food. This issue isn’t just about hunger; it impacts health, education, and the overall well-being of our communities.
Why Does This Matter?
Understanding food insecurity helps us realize that it’s not simply a statistic — these are real families facing daily challenges. The divide between those who have and those who do not is growing, but we can bridge this gap through community efforts and togetherness.
The Heart of Connection Through Food
My Texas roots and Little Grandma’s table inspired me to start this blog. While those meals brought joy, I also experienced the challenges of not always having a safe place to call home. I longed for those meals to last forever. Food is more than nourishment- it’s how we show love, slow down and care for each other. Prickly & Pear grew from that spirit to create a space that is warm, intentional and inviting.

Strawberry Texas Sheet Cake
Ever heard the saying “Don’t trust a skinny chef?” While I am not skinny, I’m skinnier than I used to be. When I first made this cake, I thought it was amazing- and I hope you will as well.
A classic Texas sheet cake with a twist — light, moist, and perfect for feeding a crowd.

Ingredients:
2 cups all-purpose flour
2 cups sugar
1 cup mashed fresh strawberries
1 cup unsalted butter
1 cup water
2 large eggs
1 tsp baking soda
½ cup sour cream
1 tsp vanilla extract
Pinch of salt
Strawberry Icing:
¼ cup mashed strawberries
¼ cup milk
½ cup butter
4 cups powdered sugar
1 tsp vanilla
Instructions:
Preheat oven to 350°F. Grease a sheet-cake pan.
Combine flour, sugar, baking soda, and salt.
In a saucepan, heat butter and water until melted. Stir in the strawberries.
Mix warm ingredients with dry ingredients, then add eggs, sour cream, and vanilla until smooth.
Pour into pan and bake for 20–22 minutes.
For icing, heat butter, milk, and strawberries. Whisk in powdered sugar and vanilla.
Pour icing over warm cake and let set.

Italian Skillet Meal
One-skillet meals are lifesavers for busy nights- fewer dishes to clean and ready in 30-40 minutes. The beauty of these meals is their simplicity: remember the basics (salt and pepper, heat, and oil the pan), then toss everything in, cover and let it cook. “Everybody swims” 😊

Ingredients:
1 lb ground Italian sausage
1 cup diced tomatoes (fresh or canned)
1 cup tomato sauce
1 cup chicken broth
1 cup uncooked pasta
1 bell pepper, diced
1 small onion, diced
2 cloves garlic, minced
1 tsp Italian seasoning
Salt and pepper to taste
1 cup shredded mozzarella
Instructions:
Brown sausage in a skillet, draining excess fat.
Add onion, bell pepper, and garlic, sautéing until softened.
Stir in tomatoes, sauce, broth, pasta, and seasoning.
Simmer covered for 12–15 minutes until pasta is tender, topping with mozzarella to melt.
Serve straight from the skillet for a rustic, flavorful meal.
Fresh Watermelon Salad
This salad can easily be converted into a Caprese Salad with minor changes. Not a fan of watermelon? Swap it out. Prefer dark balsamic? Go
for it. Just don’t add walnuts and tell me it’s amazing!

4 cups of cubed watermelon
1 cup crumbled feta
½ cup sliced red onion
¼ cup chopped mint
Juice of 1 lime
Drizzle of olive oil
Pinch of salt
Instructions:
Combine watermelon, feta, onion, and mint.
Drizzle with lime juice and olive oil, tossing gently to serve chilled.

Volunteer at a homeless shelter and serve a meal. I promise you’ll walk away changed. Not everyone who is unhoused fits the stereotype. Many work hard but still can’t afford a safe place to live.
